Herb and Spinach Linguine

Ingredients
- 1/2 bag (250g) Arctic Gardens Spinach
- 12 oz (340 g) linguine
- 3 cloves garlic, minced
- 1/4 tsp (1 mL) each salt and pepper
- 1/4 cup (60 mL) minced fresh chives
- 1/3 cup (75 mL) chopped oil packed sun dried tomatoes
- 2 tbsp (25 mL) extra-virgin olive oil
- 1/3 cup (75 mL) grated Parmesan cheese
Preparation
- In large pot of boiling salted water, cook pasta until tender but firm, about 8 minutes. Drain, reserving 3/4 cup (175 mL) of the cooking liquid.
- Meanwhile, heat large skillet to medium-high; combine frozen spinach, 1/2 cup water and garlic. Stir occasionally, breaking spinach up with wooden spoon. Cover and simmer for about 4 minutes.
- Add pasta and cooking liquid to spinach mixture; toss until pasta is coated. Add chives, tomatoes, cheese and oil; toss to coat until heated through, about 2 minutes.
