Ingredients
- 2 tbsp (30 ml) butter
- 1 onion, chopped
- 2 cloves of garlic, finely chopped
- 3 cups (750 ml) potatoes, peeled and chopped
- Salt and freshly ground pepper
- 6 cups (1.5 litres) chicken or vegetable stock
- 1 bag Arctic Gardens peas
- 1/3 cup (80 ml) 15% or 35% cream
- ½ tsp (2 ml) curry powder
- 2 tbsp (30 ml) fresh mint or cilantro, chopped
Preparation
- In a large saucepan, melt butter on medium heat. Sauté onion, garlic and potatoes for 5 minutes. Season.
- Pour the stock into the pan, bring to a boil and cook for 10 minutes covered.
- Add peas and cook for another 10 minutes or until the potatoes are tender. Remove from heat and cool.
- Using an electric mixer, purée ingredients until smooth. Pass through a sieve, if desired.
- Return to the pan, add the cream, curry and correct the seasoning.
- Reheat and garnish with mint or cilantro. Serve.
