Ingredients

  • 1 bag Arctic Gardens Orleans Style Vegetables
  • 3 chicken breasts, cut into cubes
  • Salt and freshly ground pepper
  • 4 slices bacon, cut into 2.5 cm (1 inch) pieces
  • 125 mL (1/2 cup) sour cream
  • 60 mL (1/4 cup) chopped fresh chives
  • 125 mL (1/2 cup) grated old cheddar cheese

Preparation

  1. Preheat oven to 450oF (230oC).
  2. Spread vegetable mixture on half of a parchment paper-lined baking sheet. Place chicken cubes on the other half. 
  3. Season with salt and pepper and add bacon pieces on top of vegetables and chicken.
  4. Bake for 25 minutes or until chicken is cooked through and bacon is crisp.
  5. Meanwhile, in a large bowl, mix sour cream with chives and cheddar cheese. 
  6. Remove baking sheet from oven and empty contents into bowl.
  7. Stir well to melt the cheese. Adjust seasoning and serve in bowls. 
  8. Serve with a fork and spoon to catch all the sauce
