Ingredients
- 1 tbsp (15 ml) olive oil
- 1 bag Arctic Gardens vegetables for soup
- Salt and freshly ground pepper
- 1 can 28 oz (798 ml) diced tomatoes
- 6 cups (1.5 litres) beef stock
- 1 tsp (5 ml) dried basil or thyme
- 2 cups (500 ml) cabbage, roughly chopped
Preparation
- In a large pot, heat oil on high heat. Sauté vegetables for 5 minutes. Season.
- Add tomatoes and stock to the sautéed vegetables.
- Bring to a boil. Add basil and cabbage.
- Lower the heat to medium, cover and let simmer for 30 minutes.
