Ingredients
- ½ bag (375g) Arctic Gardens California style vegetable mix
- 90 ml (6 tbsp) parsley, finely chopped
- 45 ml (3 tbsp) mint, finely chopped
- 30 ml (2 tbsp) Italian tomatoes, cubed
- 15 ml (2 tbsp) green onions, chopped
- 5 ml (1 tsp) ground cumin
- 30 ml (2 tbsp) lemon juice
- a few drops Tabasco sauce and Worcestershire sauce
- salt and pepper to taste
Preparation
- In a pot filled with salted boiling water, blanch or steam the vegetables for 4 minutes. Run under cold water and drain.
- In a food processor, add vegetables and chop until the texture is similar to semolina.
- Place a colander in a mixing bowl. Add the vegetable mixture and let drain in the fridge for 20 minutes.
- Pour the vegetable mixture into another mixing bowl. Add the remaining ingredients and mix well. Keep in the fridge for at least 15 minutes before serving.
