  • ½ bag (375g) Arctic Gardens California style vegetable mix
  • 90 ml (6 tbsp) parsley, finely chopped
  • 45 ml (3 tbsp) mint, finely chopped
  • 30 ml (2 tbsp) Italian tomatoes, cubed
  • 15 ml (2 tbsp) green onions, chopped
  • 5 ml (1 tsp) ground cumin
  • 30 ml (2 tbsp) lemon juice
  • a few drops Tabasco sauce and Worcestershire sauce
  • salt and pepper to taste


  1. In a pot filled with salted boiling water, blanch or steam the vegetables for 4 minutes. Run under cold water and drain.
  2. In a food processor, add vegetables and chop until the texture is similar to semolina.
  3. Place a colander in a mixing bowl. Add the vegetable mixture and let drain in the fridge for 20 minutes.
  4. Pour the vegetable mixture into another mixing bowl. Add the remaining ingredients and mix well. Keep in the fridge for at least 15 minutes before serving.
