California Style Salmon Stir Fry

Ingredients
- ½ bag (750g) Arctic Gardens California-Style Vegetable Mix
- 30ml (2 tbsp.) balsamic vinegar
- salt and fresh-ground pepper
- ½ lemon, juiced
- 800g salmon filet, skinless
- 15 fresh cilantro leaves
- 1 egg yolk
- 80ml (1/3 cup) olive oil
- 1 avocado
- 30ml (2 tbsp.) olive oil
Preparation
- Thaw vegetables for 2 minutes in a pot of salted boiling water.
- Drain vegetables and submerge in a bowl of ice water until cold.
- Drain vegetables again and dry over paper towel. Toss with cilantro leaves and reserve.
- In a bowl, combine egg yolk and balsamic vinegar. Slowly add olive oil, whisking until an emulsion forms. Season with salt and pepper to taste.
- In a food processor, puree avocado with lemon juice. Season with salt and pepper to taste.
- Heat olive oil in a pan and sear salmon for 1 to 2 minutes on each side.
- Slice salmon.
- Arrange salmon slices over a slash of avocado puree. Garnish with vegetable and cilantro mix and top with vinaigrette.
