Broccoli croquettes
Ingredients
1 bag Arctic Gardens broccoli florets
3 eggs
1 1/2 cups (375 ml) grated cheese
1 cup (250 ml) breadcrumbs
1/2 tsp (2 ml) salt
1/4 tsp (1 ml) ground pepper
Preparation

In a pot of boiling salted water, cook the broccoli florets for 5 minutes. Drain, rinse under cold water and drain again.

Using a food processor, process half of the broccoli to obtain a coarse purée with pieces. Transfer to a large bowl and repeat with remaining broccoli.

Add eggs, cheese, breadcrumbs, salt, and pepper. Mix well and let stand for 15 minutes.

Preheat the oven to 475 oF (245 oC).

Use about 2 tbsp (30 ml) of the broccoli mixture to make croquettes. Shape into logs. Place on a baking sheet lined with parchment paper.

Bake for 10 minutes, turn and continue cooking for 7 to 10 minutes or until croquettes are crispy and golden.

Serve as is or with a dip.
