Teriyaki Chicken Stir Fry

Ingredients
- 60g vegetable oil
- salt and ground pepper
- ½ bag (375g) Arctic Gardens Asian-Style Stir-Fry Mix
- 5ml chopped fresh ginger
- 5ml peanut butter (optional)
- juice of half a lime
- 4 chicken breasts, cut into strips
- 10ml hoisin sauce
- 2 cloves garlic, chopped
- 5ml Sambal Oelek sauce (hot pepper paste)
- 10 leaves fresh basil, minced
Preparation
- Heat half of oil in a wok over high heat and sauté chicken. Season.
- Add 5 ml (1 tsp.) of hoisin sauce and set aside.
- Heat remaining oil in another wok over high heat and sauté vegetable mix with garlic, ginger, and Sambal Oelek. Cook for 2 minutes.
- Add remaining hoisin sauce, peanut butter, basil, and lime juice.
- Serve over long grain rice, add chicken, and garnish with fresh basil.
