Ingredients
- 750 g (1 bag) Arctic Gardens frozen super sweet corn
- 5 tomatoes, diced
- 2 cans (540 ml/19 oz) black beans, rinsed and drained
- 175 mL (3/4 cup) green onions, sliced
- 45 mL (3 tbsp) fresh coriander, chopped
- 2 jalapeno pepper, finely chopped
- 175 g (6 oz) Feta cheese, diced
- 340 g (12 oz) cooked shrimps
Salad Dressing
- 45 mL (3 tbsp) lime juice
- 125 mL (1/2 cup) olive oil
- 2 garlic clove, chopped
- 5 mL (1 tsp) ground cumin
- Salt and pepper
Preparation
- Steam cook corn, drain and set aside.
- Combine all the ingredients and the salad dressing together. Chill in refrigerator at least 1 hour, check seasoning and serve.
