A good soup is so comforting! Tom Yum soup is even better! Vary your menus with this quick recipe that will impress everyone. Yum yum!

Ingredients

Soup

400 g (1 packaging) medium Pad Thai style rice noodles
2 500 ml (2 1/2 liters) chicken broth
400 ml (1 box) coconut milk
1 piece of ginger measuring 2 cm, peeled and cut into slices
1 stalk of lemongrass, cut into pieces
3 dried kaffir lime leaves
30 ml (2 tbsp.) Tom Yum paste
30 ml (2 tbsp.) fish sauce
15-20 ml (3-4 tsp.) sugar
337 g or 3-4 cups (1/2 bag) Arctic Gardens Corn and Vegetables Stir-Fry mix

Toppings

1 lime, cut into rounds
30 ml (2 tbsp.) fresh cilantro, chopped
2 green onions, sliced
30 ml (2 tbsp.) crushed peanuts

Preparation

1. Soak rice noodles in warm water for 20-30 minutes.
2. In a pot, add the chicken broth, the coconut milk, ginger/lemongrass/lime leaf. Boil for 5 minutes.
3. Add the Tom Yum paste and sugar, mix well and simmer over medium heat for 10 minutes.
4. Place Arctic Gardens frozen vegetables in a microwave safe dish, cook on high for 4-5 minutes or until vegetables are heated through. Set aside. 
5. In a pot of boiling water, cook the rice noodles for 20 to 30 seconds.
6. Separate the rice noodles into bowls, put the vegetables on top and cover with the broth.
7. In each bowl, add a slice of lime and sprinkle with cilantro, green onions and crushed peanuts, to taste. Enjoy!
