Festive appetizers are always a winning choice when it’s time to invite friends and family over! Here is a delicious Canape cake with broccoli, lemon cream and prosciutto recipe that will make your taste buds and those of your guests dance.
Ingredients
Cake
225 g (1/2 bag of 450 g)
Arctic Gardens Broccoli Florets
15 ml (1 tbsp) olive oil
7.5 ml (1/2 tbsp) chopped garlic
4 green onions, chopped
185 ml (3/4 cup) all-purpose Flour
80 ml (1/3 cup) fécule de maïs
7.5 ml (1 1/2 tsp) baking powder
2.5 ml (1/2 tsp) pepper
5 ml (1 tsp) salt
375 ml (1 1/2 cup) grated sharp cheddar cheese
3 oeufs
80 ml (1/3 cup) olive oil
125 ml (1/2 cup) milk
60 ml (1/4 cup) chopped parsley
60 ml (1/4 cup) chopped basil
30 ml (1/8 cup) chopped chives or dill
Topping
250 ml (1 cup) sour cream
1 lemon, juice and zest
Salt and pepper, to taste
6 slices of prosciutto, cut into quarters
Preparation
- Preheat the oven to 375°F (200°C), convection mode.
- Grease and line a 9" x 5" loaf pan with parchment paper.
- Defrost the broccoli in the microwave for 3 minutes. Cut the broccoli into small pieces.
- Brown the garlic, green onions and broccoli in a pan in olive oil for a few minutes. Set aside.
- In a bowl, combine flour, cornstarch, baking powder, pepper and salt.
- In another bowl, mix the eggs and oil using a whisk. Incorporate the dry ingredients in several batches, alternating with the milk. Add the herbs, grated cheese and broccoli mix.
- Pour the batter into the pan, then bake for 45-50 minutes or until the center is cooked through.
- Prepare the topping by mixing the sour cream with the lemon juice and zest, seasoning to taste.
- Leave to cool before unmolding and cutting into 1.5 cm thick slices, then cut each slice in half.
- Place a little lemon cream and a piece of prosciutto on each canape. Enjoy!
