Ingredients

  • 1 bag of 340 g Arctic Gardens rice cauliflower
  • 1 clove garlic, finely chopped
  • 1 ¼ cup (310 ml) freshly parsley, coarsely chopped
  • 2 tbsp (30 ml) fresh mint, finely chopped
  • 2 green onion, chopped
  • 2 tomatoes, chopped
  • 2 tbsp (30 ml) olive oil
  • 2 tbsp (30 ml) lemon juice
  • Salt and freshly ground pepper

Preparation

  1. Bring salted water to a boil and cook cauliflower for 2 minutes.
  2. Drain, rinse under cold water and drain again.
  3. In a bowl, mix together all ingredients.
  4. Season to taste.
