Tofu vegetable wrap

Ingredients
- 8 nuggets Arctic Gardens Southwestern dip
- 4 large whole wheat or multigrain tortillas
- 1/2 lb (225 g) extra-firm tofu with fine herbs, cut into strips
- 1 pepper, julienned
- 1/2 cucumber, seeded and cut into very thin half-slices
- 1 avocado, peeled and cut into 8

4 lettuce leaves
Preparation
- Thaw dip according to package instructions.
- Place tortillas on work surface.
- At the centre of each tortilla, draw a broad line of dip from left to right, leaving 1.5 in. (4
- cm) untouched at each end.
- Place the tofu strips and peppers on the dip to create a cylinder with the filling.
- Add the avocado, cucumber and top with the lettuce.
- With each tortilla, fold both ungarnished ends of the tortilla, then roll it from the bottom
- up onto the toppings. Roll firmly and close. Secure with toothpick if necessary.
