Ingredients
- 1 bag of 340 g Arctic Gardens rice cauliflower
- 1 clove garlic, finely chopped
- 1 ¼ cup (310 ml) freshly parsley, coarsely chopped
- 2 tbsp (30 ml) fresh mint, finely chopped
- 2 green onion, chopped
- 2 tomatoes, chopped
- 2 tbsp (30 ml) olive oil
- 2 tbsp (30 ml) lemon juice
- Salt and freshly ground pepper
Preparation
- Bring salted water to a boil and cook cauliflower for 2 minutes.
- Drain, rinse under cold water and drain again.
- In a bowl, mix together all ingredients.
- Season to taste.
