Ingredients

2 cups (500 ml) vegetables for lasagna

2 avocados

3 tbsp (45 ml) lemon juice

1/4 tsp (1 ml) garlic powder

Salt and pepper to taste

1/4 cup (60 ml) freshly chopped cilantro

1 jalapeno, seeded and finely chopped - optional

Preparation

  1. In a non-stick pan, heat the vegetables on medium heat just enough to thaw. Transfer to a plate and let cool.
  2. Peel and stone the avocados putting the flesh in a bowl. Mash with a fork and add lemon juice and garlic powder.
  3. Season generously with salt and pepper and mix.
  4. Add cooled vegetables, cilantro and jalapeno.
  5. Serve with crackers, raw vegetables or Mexican food.
