Ingredients

  • 1/2 bag (375g) Arctic Gardens Spaghetti or Lasagna vegetables
  • 50 mL (1/4 cup) olive oil
  • 125 mL (1/2 cup) pancetta, diced (optional)
  • 4 garlic cloves, finely chopped
  • 500 mL (2 cups) diced tomatoes
  • 15 mL (1 tbsp) basil
  • 2 L (8 cups) chicken broth
  • Salt and pepper
  • 750 mL (3 cups) spinach, chopped

Preparation

  1. In a large saucepan sauté pancetta and garlic in oil until golden brown. Add remaining ingredients except spinach.
  2. Bring to a boil and cook over medium heat 15 minutes.
  3. Add spinach and cook 5 minutes.
  4. Verify seasoning and serve.
