Sole & Veggie Casserole with beer

Ingredients

1/2 bag (375g) Arctic Gardens Brussellian Style Vegetable Mix
1 clove garlic, halved and shoots removed
125ml (1/2 cup) 35% cream
600g (1 1/2 lb.) fresh sole filets
15ml (1 tbsp.) butter
15 flat parsely leaves
175 mL (1/2) blonde beer
salt and freshly ground pepper

Preparation

  1. Preheat oven to 450°F (230°C).
  2. Place vegetables, butter, parsley, and garlic in an ovenproof dish.
  3. Arrange fish on top.
  4. Pour beer and cream over casserole and season.
  5. Cover and bake for 10 minutes.
  6. Serve family-style in center of table.
