Grilled Vegetables and Salmon

Ingredients

  • 15 ml (1 tbsp. ) Mustard
  • 30 ml (2 tbsp. ) Lemon juice
  • 30 ml (2 tbsp. ) Honey
  • Salt and pepper
  • 1 bag of vegetables Grill Arctic Gardens
  • 4 servings 150 g ( 5 oz) skinless salmon fillet

Preparation

  1. Preheat barbecue to high intensity or oven to 500oF ( 260oC ) .
  2. In a bowl, mix the mustard , lemon juice and honey. Season.
  3. On a large sheet of aluminum ( 2 layers ) , place vegetables in a single layer .
  4. Place the salmon on top of vegetables .
  5. Pour honey and lemon on the salmon.
  6. Close into a packet leaving a slight opening to let steam out. 
  7. Place on the grill or oven and cook for about 15 minutes on the grill or for about 20 minutes in the oven. Cook to desired salmon doneness.
  8. Serve a portion of salmon with vegetables and a green salad.
