Ingredients

  • 2 tbsp (30 ml) butter
  • 1 onion, chopped
  • 2 cloves of garlic, finely chopped
  • 3 cups (750 ml) potatoes, peeled and chopped
  • Salt and freshly ground pepper
  • 6 cups (1.5 litres) chicken or vegetable stock
  • 1 bag Arctic Gardens peas
  • 1/3 cup (80 ml) 15% or 35% cream
  • ½ tsp (2 ml) curry powder
  • 2 tbsp (30 ml) fresh mint or cilantro, chopped

Preparation

  1. In a large saucepan, melt butter on medium heat. Sauté onion, garlic and potatoes for 5 minutes. Season.
  2. Pour the stock into the pan, bring to a boil and cook for 10 minutes covered.
  3. Add peas and cook for another 10 minutes or until the potatoes are tender. Remove from heat and cool.
  4. Using an electric mixer, purée ingredients until smooth. Pass through a sieve, if desired.
  5. Return to the pan, add the cream, curry and correct the seasoning.
  6. Reheat and garnish with mint or cilantro. Serve.
