Ingredients

  • 1 tbsp (15 ml) olive oil
  • 1 bag Arctic Gardens vegetables for soup
  • Salt and freshly ground pepper
  • 1 can 28 oz (798 ml) diced tomatoes
  • 6 cups (1.5 litres) beef stock
  • 1 tsp (5 ml) dried basil or thyme
  • 2 cups (500 ml) cabbage, roughly chopped

Preparation

  1. In a large pot, heat oil on high heat. Sauté vegetables for 5 minutes. Season.
  2. Add tomatoes and stock to the sautéed vegetables.
  3. Bring to a boil. Add basil and cabbage.
  4. Lower the heat to medium, cover and let simmer for 30 minutes.
