Brussellian Style Grilled Shrimp

Ingredients

  • 1/2┬ábag (375g) Arctic Gardens Brusselian Vegetables
  • 750g (1 2/3 lb) shrimp (size 16-20 or 21-25)
  • 2 garlic cloves, halved and shoots
  • 125ml (1/2 cup) 35% cream
  • 5ml (1 tsp) sweet or host smoked paprika
  • Zest of 1 lemon
  • salt and fresh-ground pepper
  • 60ml (1/4 cup) olive oil
  • 3 sprigs thyme removed
  • 125ml (1/2 cup) white wine

Preparation

  1. Preheat grill or oven to 400°F (200°C).
  2. Place a large square of aluminum foil on work surface.
  3. Put vegetable mix and lemon zest on foil, then season.
  4. Cover with a second piece of aluminum foil. Seal tightly and bake for about 10 minutes.
  5. In the meantime, heat oil in a skillet and sear shrimp. Add garlic and thyme half-way through cooking. Set aside.
  6. Deglaze skillet with white wine and cook for 1 minute.
  7. Reduce heat, add cream and paprika, and season. Simmer until smooth.
  8. Serve shrimp over vegetables, topped with sauce.
