Asparagus & Mango Salsa

Ingredients

  • 1 bag (300g) Arctic Gardens asparagus
  • 1 red bell pepper, seeded and chopped
  • 1 yellow sweet pepper, seeded and chopped
  • 15 ml (1 tbsp) jalapeno pepper, seeded and finely chopped
  • 160 ml (2/3 cup) mango, cubed
  • 1 tbsp (15 ml) Cilantro, finely chopped
  • 1 tsp (5 ml) Lime zest
  • 1 tsp (5 ml) Lime juice
  • A dash of salt
  • A dash of ground black pepper

Preparation

  1. Steam the asparagus for 4 minutes. Drain and set aside in the fridge. 
  2. In a large bowl, mix together all of the ingredients except the asparagus,salt and pepper. Set aside.
  3. Add the asparagus to the other ingredients. Mix well.
  4. Serve very cold as a side dish.
