Asparagus & Egg muffins
6 asparagus (Asparagus Arctic Gardens)
2 tbsp (30 ml) milk
1 pinch ground nutmeg
Salt and ground black pepper
1/3 cup (80 ml) all-purpose flour
½ tsp (2 ml) baking powder
2 strips cooked bacon chopped OR 1 slice of ham, chopped

- Put asparagus on a plate and thaw in the microwave for 30 seconds.
In a bowl, beat the eggs with milk.
Add nutmeg and season to taste.
Mix together the flour and baking powder and incorporate into the egg mixture while whisking. Mix well.
Add bacon and asparagus cut into 1" (2.5 cm) pieces.
Spread the mixture into silicone muffin cups or ramekins.
Microwave for 3 to 4 minutes. Cooking time will vary depending on the microwave and size of the bowl used.
